Does changing the extension convert the file?

No. Only the extension in the file name changes and the content stays the same. To really turn an image into a JPG, use the Image tools.

Can I change only certain extensions?

Yes. Type for example jpeg in the From extension field and only .jpeg files change, the rest stay as they are.

Can I open ZIP files and change what is inside?

Yes. Drop a ZIP and its contents are listed, with the folder structure kept.
